Coffee Cake Mug Cake

AKA it’s my-kitchen-is-a-wreck-and-microwave-cooking-is-where-it’s-at-for-the-moment time.  All the tile is ripped up, multiple cabinets have been demolished and the dishwasher is no longer functioning.  

Whenever I get overwhelmed by the mess, Andrew keeps telling me to think about how strongly I disliked the kitchen to start with.  Our oven still does work, but being dishwasher-less limits the amount of dishes I want to dirty.  Cleaning is not my strong suit.

So microwave anything is winning right now.

So this coffee cake mug cake.  It’s perfect for breakfast with a latte or perhaps for a random dessert.  The recipe makes two mug cakes, so if you make it for breakfast you’ll have breakfast for today and breakfast for tomorrow.  Unless you share with someone.  In which case you will each just have one mug cake.  

Either way…yum.

I’m not sure what makes a coffee cake a coffee cake, but I think a coffee cake for sure has to have cinnamon and flour. This recipe has both of those things so we’re good to go.  And I paired it was a coffee.  So boom.  COFFEE cake.  

I remember this one time my brother-in-law had a minor meltdown when my mother-in-law put blueberries in her coffee cake.  He said a coffee cake can’t have blueberries.  I have to think that is completely ridiculous because I’m in the boat that says blueberries enhance any baked goods.

But today’s coffee cake mug cake is rather on the simple side.  The batter is made with your favorite pancake mix, Almond Breeze Unsweetened Original Almondmilk, cinnamon, butter and maple syrup.  Just 5 simple ingredients.  The topping is made with brown sugar and chopped up almonds.  So we’re at 7 ingredients total.

Coffee Cake Mug Cake

Yield: 2 mug cakes

Prep Time: 2 minutes

Cook Time: 1 minute

Total Time: 3 minutes

Ingredients:

mug cake
1/2 cup + 2 tablespoons your favorite pancake mix
3/4 teaspoon cinnamon
1/4 cup Almond Breeze Unsweetened Original Almondmilk
2 tablespoons melted butter
2 tablespoons maple syrup

topping
3 tablespoons roughly chopped almonds
2 teaspoons brown sugar

Directions:

In a bowl, combine pancake mix, cinnamon, Almond Breeze Unsweetened Original Almondmilk, butter and maple syrup.  Divide batter between two greased mugs.  Divide topping evenly among both.  Microwave for 30-60 seconds (depending on microwave strength and desired gooey-ness).

  1. Nothing makes me happier than a quick, easy, messless, hot steamy mug cake! I have experimented using pancake mix as a flour in mug cakes and I feel it totally makes the best ones I’ve made to date!

  4. I have always wondered what makes coffee cake a coffee cake. When I was little I thought that a coffee cake had coffee in it….boy, was I wrong! This recipe looks so simple and tasty. I am a big fan of single-serve treats for my husband and I.

  7. I remember the kitchen renovation trauma well. But at least you have an oven!! We had nothing but a toaster, microwave and a bathtub to wash dishes in. Needless to say there were A LOT of mug cakes and other microwaveable foods! Can’t wait to see the kitchen when it’s done though!

  10. Had extra time this morning and made this!
    Pancake mix >> regular flour
    I substituted coconut oil for butter
    Unfortunately I did the full 60 sec (#distracted) so it was a little dry, I chose to make it a literal coffee cake and poured a little coffee over it – that turned it to the perfect moist cake (not sorry for using moist)
    Next time I’ll also add a pinch of salt to the batter
