Farro Kiwi Caprese Salad with Avocado Roses

I made kiwi flowers & avocado roses!

I used this video for the kiwis and for the roses I just used a vegetable peeler to shave off strips of avocado and then layered the strips together to make a rose.  It kinda looks like the avocado strips are in a massive hug.  Avocado love<3<3<3

So.  This recipe calls for 4 kiwis, but I recommend you buy more kiwis than that so you can practice on a few.  I tried to rush through making the kiwi flowers and while they went pretty quick once I got the hang of it, I completely butchered the first 3 kiwis.  I bought 12 kiwis.  That was a bit excessive.  Buy 6 kiwis.  Practice on 2.  Make the other 4 pretty flowers.

Now this salad is a spring-y/summer-y salad if I ever did see one.  

It’s spring-like because April showers brings May flowers and we’ve got kiwi flowers AND avocado flowers here.  

It’s summer-like because it’s so bright and sunny.  

So it’s basically a salad of sunshine and flowers.  And cheese.

So.

I have no idea what food on the blog is going to look like in the coming months.  Andrew and I spent the weekend finishing demolishing our kitchen.  We still have an oven, microwave, coffee maker, and fridge.  But the kitchen sink is gone which has me wanting to limit the amount of cooking I’ll be doing.  I have about 4 recipes that I’ve made ahead of time to share with you, but I’m not sure what’s gonna happen after that.

Perhaps some “day in the life”-esque posts about that time I ate out practically every meal for a month.

Perhaps some more intuitive eating, positive body image, Health at Every Size posts.

Perhaps we’ll go on a weekend trip somewhere because I’ll be so over not having a kitchen and I’ll share that.

Perhaps I’ll just go to my parent’s house or Andrew’s parent’s house and use their non-demolished kitchen to make some more recipes.

Actually it’ll probably look like a combination of all 4 of those things.

But for now.  Kiwi flowers!

Farro Kiwi Caprese Salad with Avocado Roses

Yield: serves 4-6

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

1 1/2 cups cooked farro
3 cups cherry tomatoes
1 cup baby mozzarella balls
4 kiwis
1 avocado
1/2 cup fresh basil
balsamic glaze

Directions:

First make your kiwi flowers by watching this video.  Next make your avocado roses by using a vegetable peeler to slice strips of avocado.  Then wrap the avocado strips around each other until a rose shape forms.

In a bowl, combine farro, tomatoes, mozzarella, basil and kiwis.  Place avocado roses on the top.  Drizzle with balsamic glaze.

    I don’t think I could ever master the kiwi cutting, but I can probably roll up a slice of avocado. This looks so fresh and delicious!
