I’m partial to dessert and breakfast recipes, but occasionally sharing a dinner recipe seems like the thing to do.

So here we are with stir-fry.  This recipe makes a great basic stir-fry, but I made BBQ peanuts to add a crunch!  And BBQ peanuts make this recipe so not a basic stir-fry.  It’s fancier than a basic stir-fry!

The peanuts.  They are just BBQ sauce + garlic powder + peanuts that are roasted until crispy and delicious.  Like crispy chickpeas…but peanut-ier.

So the most delicious chicken marinade is pineapple juice mixed with soy sauce.  Seriously.  Go marinate your chicken in it!  Life changing.  

But for this recipe I used pineapple juice + soy sauce to create an easy, peasy stir fry for life.  The pineapple makes it sweet and fruity and the soy sauce mellows everything out a bit.  And sometimes I need more mellow things in my life.  And for those nights…let’s all make THIS.

Pineapple Soy Sauce Tofu Stir-fry with BBQ Peanuts

Yield: serves 4ish people

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

stir-fry
8 oz can crushed pineapple in pineapple juice
1/2 cup soy sauce
1 tablespoon cornstarch
1 block tofu, water pressed out and cut into triangles
2 bunches asparagus, woody stems removed
3 carrots, shaved

bbq peanuts
1/2 cup peanuts
1/4 cup BBQ sauce
1 teaspoon garlic powder

serve with: brown rice, chives

Directions:

Preheat oven to 350ºF.  Spray a baking sheet with non-stick spray.  Spread tofu out on the baking sheet and bake for 15 minutes.  Then flip to the other side.  Then bake for another 15 minutes.  Then check the texture of the tofu and continue baking in 10 minutes increments until the tofu is crunchy/firm enough for you. 

Meanwhile, add asparagus and carrots to a sauté pan with some olive oil.  Cook over medium-high heat until veggies are soft, about 15 minutes.  While veggies are cooking, combine soy sauce with can crushed pineapple and cornstarch.  Once cornstarch is dissolved, pour sauce into sauté pan with the veggies.  Heat to a simmer and continue simmering until sauce thickens, about 5 minutes.  If your asparagus still needs to cook more, cover your sauté pan with a lid and allow it to boil/steam in the stir-fry sauce.

While sauce is simmering, combine your peanuts with BBQ sauce and garlic powder.  Spread evenly onto a baking sheet and bake at 400ºF for 15 minutes, stirring twice during cooking time.  Allow to continue baking if they are not crispy.

Assemble brown rice + veggies in stir-fry sauce + tofu + chives + BBQ peanuts and SERVE!
