Weekend Recap.

Hi guys!

I wanted to share a bit of our weekend with you.  Saturday was Andrew’s birthday and we met Andrew’s parents at Perry’s Steakhouse to celebrate.

Dinner started with a glass of red wine and all of us sitting at the bar talking.  Once we got to our table I ended up ordering a filet topped with lump crab + asparagus served in a cozy pool of butter.

They have family style sides at this place, so I requested truffle parmesan steak fries for the table to split.  I’m currently SO INTO truffle.  This may change tomorrow, but for now…oooohh yum.

For dessert Andrew got a chocolate cake and Andrew’s parents and I split the s’mores bread pudding.

This dessert.  It’s one of my favorite desserts and I’m so not a bread pudding person.  But with the chocolate and the humongous toasted marshmallow it just works.

Then home!

The next morning I somehow convinced Andrew to get up early and walk to the grocery store with me.  He never wants to do this.  I quietly told him I was going while he was still in bed halfway asleep and then he said he wanted to go…which I loved!  26 has changed him.  And he likes coffee now too, which I think is super fun.

Sleepy eyes…

I woke up mega stiff and a walk sounded nice.

I also wanted to make an upside-down apple pancake thing for breakfast and we had no apples.  So a walk to the store for apples it was.

When we got home I sauteèd the apples in butter and whipped up a pancake batter with Kodiak Cakes.

Let me zoom out to show you how ridiculous this setup is…

After I poured in the pancake batter, I turned on the oven broiler and put the sautè pan in the oven to let the top of the pancake cook.

Then slice & top with peanut butter + maple syrup + an iced latte on the side.

Then we went to church.

…and the grocery store.

The haul.

When we got home it was time for lunch so I made a breakfast taco with eggs, cheese, salsa and cilantro.  I was also finishing up testing a coffee creamer recipe I’m sharing this week, so I made another latte to have with the taco.

Then I photographed two recipes for the week.  All while watching HGTV and being moral support for Andrew as he painted the ceiling in the next room.

First recipe = caramel coconut milk coffee creamer in the epic-ist glasses.

Then a spring roll recipe.  I enjoyed having these SO much for lunch last week that I decided to make them again and share the recipe.

What a mess!

At this point it was time for a snack.

So I had some milk & dark chocolate covered almonds.

Then an apple while I sat outside and watched Andrew work on stuff.

Then I was ready to get out of the house for a bit.  I’m grateful for the kitchen remodel and 90% of the time I’m not overwhelmed by the mess that is the kitchen/entire house, but occationally the destruction gets to me and I feel like I HAVE TO get out of the house.

I was having one of those moments, so I decided to go to yoga.

The teacher who teaches the Sunday afternoon class is funny.

He’s quite the tequila lover and always has a story about his tequila intake on Saturday night.  And he always weaves this story into the yoga class and it’s hilarious.

Then home to make dinner.

We had salmon that was topped with garlic butter.

Served with this ravioli + pesto + handful of greens.

All together now.

Eaten while watching James Bond.  Dinner and a movie on Sunday night has kinda become a thing for us.

Then I made a batch of cookies.

I was going to make this cookie recipe, but decided to switch it up a bit and the cookies came out quite cakey.  Kind of like a muffin top.  Surprisingly I didn’t hate it.

I had a glass of milk and some cookies (or, errrm, muffin tops) and then was off to bed.

Clients start at 8am, which means I’ve got a 6am-ish wake up time.  I rarely get out of bed before 6am anymore lol.  Those days are long gone.

  1. As usual, loved reading this recap post! It’s fun to live vicariously through other people! ;-)

  2. Please post the recipe for the cake-like cookies!!!!!

  3. Your kitchen set-up is hilarious… from my perspective. You’re probably pretty sick of it!

We go to an Ekklesia too :)
