The Best Spring Rolls
Alternatively called, “how to eat peanut butter at every meal.”

I’m trying to only buy two out during the week. I mean, I’m totally for enjoying a latte every day, but there is no better way to blow some cash than falling into a latte-from-a-cafe/day routine. I feel like the lattes I make at home are as equally delicious as the ones I buy out, but I like the experience of buying them out! You know? I’m trying to convince myself that I’ll enjoy the experience even more if I only drink them out twice a week. Wish me luck in this life change.
Other life changes. Maggie is staying at my parent’s during the remodel and I miss her so much. I can’t function at night or go to sleep. Anytime I’m stressed I hug her and now she isn’t here and I can’t handle it. Everyone should have a dog! Or a cat! EVERYONE!!
Yesterday was an interesting day. I woke up to a text message from my mom at 5am asking if we were flooded. The rain was out of control and one of my parent’s cars had flooded over the night.
I got up and everything was fine. There was no water in our house and not too much standing water outside. However it was still pouring out and all around our neighborhood was flooded, so we stayed put all day. I cancelled all my clients, including Skype sessions, because I was worried about losing power. We don’t get snow days in Houston, but we do get flood days.
Around 2pm we were getting cabin fever-y and since the rain calmed down a bit we went on a walk to explore the damage. The bayou near us was filled to the top with rushing water AND there was a crazy man jumping into the bayou on a pool float. So dangerous. Houston has water moccasins and there were BALLS of fire ants.
Have you seen a ball of ants? When ants are in water they crawl on top of each other to stay out of the water and form a giant ball of ants! And if you come in contact with a giant ant ball they will cover you and bite you. AHHH. You don’t want to be covered in fire ants. Don’t jump into a bayou filled with rushing rain water. Instead. Stay home and eat spring rolls for lunch. That is what we did.
Last week I made these to take for my lunches and I looked forward to them so much everyday, so I decided to make them again this week and share the recipe with you. They’re not very difficult to make because they require zero cooking, which is nice even if you’re not living in a house without a kitchen sink.
Once you taste the sauce, I hope you think of 904284 other things you want to put it on. It can deliciously Asian-ify any seafood/chicken/stir-fry dish. Side note: sesame oil is one of my absolute favorite smells. That, or a freshly opened container of oats. Do they make a sesame oil-oat candle. Would that smell good? Maybe not. That’s why I don’t make candles.
Into the spring rolls can go any veggies + protein combo you can dream up. For protein I used: chicken & tofu. For veggies I used: radishes (sliced super thin bc otherwise they are just too spicy for me), bell peppers, carrots, cilantro and chives.
They are so fresh.
Easy Spring Rolls with Peanut Butter Sesame Sauce
Yield: 12-15 spring rolls
Total Time: 30 minutes
rotisserie chicken or tofu, sliced
radishes, thinly sliced
rice paper wrappers
soba noodles, cooked
sesame peanut butter sauce
1/2 cup peanut butter
3 tablespoons soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons sesame oil
In a bowl, combine all ingredients for your peanut butter sauce until smooth. One at a time, dip a rice paper wrapper in water to rehydrate. Fill with toppings and generous spoonful of peanut butter sauce. Repeat.
Sauce recipe makes enough sauce to make 12-15 spring rolls.
