ON TO THESE FROZEN POPS!

I think it’s engrained in my head that frozen pops like these are best when layers are involved.

But I would like to emphasize that these are the only types of layers you want in your life during summer.  You can have stripes on your clothes, but you don’t want layers of clothes.  NOOO.  

So to be clear.  We’re anti layers in summer when it comes to clothing.  But we are FOR layers in frozen treats, especially if the treat is iced latte-esque because we all know that iced lattes are THE drink of summer.  Or at least that is the case in my little latte-filled world I live in. 

Other things of summer.  Did you see this chocolate covered watermelon? Holy smokes brilliant.

Pop specifics: The majority of this pop is made of greek yogurt, coffee, Almond Breeze Almondmilk Unsweetened Vanilla and cocoa.  I promise times a million that they ARE creamy like a fudge pop should be.

So.  If you are looking for a dessert that doesn’t require an oven, THIS IS IT.  THIS IS THE UNIVERSE TELLING YOU TO MAKE THIS. Well, actually, it’s me telling you.  But you should still make these.

Iced Latte Fudge Pops

Yield: 6 frozen pops

Ingredients:

7 oz 2% greek yogurt
2/3 cup honey or maple syrup
1/2 cup Almond Breeze Almondmilk Unsweetened Vanilla
6 tablespoons vanilla creamer
1/4 cup espresso (or strongly brewed coffee)
4 tablespoons dark cocoa powder
1 1/2 teaspoon vanilla
1 1/2 cup vanilla ice cream

Directions:

In a bowl, mix together all ingredients except for your vanilla ice cream.  Fill your pop molds 3/4 full of this mixture.  Freeze for one hour (don't put pop sticks into mix yet).  After an hour, the fudge mixture in the molds should be getting firm.  Now place vanilla ice cream in a microwave safe bowl and microwave until just melted.  Pour melted ice cream into molds to fill the last 1/4 of the mold.  Now stick in pop sticks and freeze until firm.  I'd recommend freezing them overnight.  Once frozen, run under warm water to loosen frozen pop from mold.
