Trendy Parfait

I’ve got a bit of breakfast inspiration for you today!

It’s a parfait made with all the trendy foods.  We’ve got chia seed pudding AND soaked oats AND nut butter AND a pretty kiwi.

It is worth noting that if you assemble this and allow it to sit for an hour or so, the graham cracker layer will get soft and perfect.  Similar to how nilla wafers get in banana pudding. It’s pretty great. 

Other things worth noting…for the recipe ingredients I said, “1 tablespoons greek yogurt, 1 tablespoons nut butter, etc.” But really, I just did a spoonful.  I did not measure out exactly 1 tablespoon of all those ingredients.  I just did a spoonful, which was close-ish to one tablespoon.  So I encourage you to just do a spoonful too.  This isn’t baking.  We don’t need to be precise.  Live on the edge and choose to not measure out the ingredients.  And while you’re at it, you may as well go completely off the edge and get a tattoo.  You wild person, you.

Trendy Parfait

Yield: serves 1 (easily doubled, tripled, etc.)

Ingredients:

chia seed pudding
2 tablespoons chia seeds
1/2 cup milk
pinch cinnamon
teeny pour vanilla

soaked oats
1/3 cup rolled oats
~1 tablespoon greek yogurt
~1/3 cup milk

nut butter graham crunch layer
3 graham crackers
~1 tablespoon nut butter (I used Justin's hazelnut butter)
scant tablespoon honey

blueberries
kiwi
cherries

Directions:

The night before you want to nom this up for breakfast, get out two bowls.  In one bowl, mix together all the ingredients for the chia seed pudding.  In the other bowl, mix together all the ingredients for the soaked oats.  Cover and place in the fridge overnight.  In the morning make your graham crunch layer by using your fingers to break the graham crackers up until all the pieces are between a piece of sand and a marble in size.  Add in your nut butter and honey.  Use your fingers to incorporate the nut butter and honey into the graham cracker pieces.

Layer nut butter graham crunch, soaked oats, chia seed pudding and fruit.  Eat immediately.  Or, if you prefer the nut butter crumble layer to get soft, place in the fridge overnight (but that seems like a lot of pre-planning lol).
