Four 15-minute dinner ideas

I wanted to share some dinner ideas that can be whipped up in 15 minutes or less.

First up, black bean quesadillas with slaw.  I bought a bag of coleslaw from the store and added cilantro, cherry tomatoes and greek salad dressing.  Into the quesadillas went black beans, parmesan cheese, sharp cheddar cheese, salsa and cilantro.  Boom.  Dinner served.

Next up, sockeye salmon with polenta rounds and salad. 

(psst. this one may actually take you 18 minutes.  sorry for the deceiving title.)

For this, I preheated the oven to 400ºF.  While oven is preheating, heat some olive oil over medium heat in a large skillet and add in sliced polenta rounds, flip ’em every 4 minutes until they are golden brown and crisp on the outside.

Once the oven is heated, place the fish on a baking sheet for 10 minutes.  Remove fish from the oven and add some olive oil to another skillet.  Add the fish and sear until cooked through and they form a nice crust (~1 1/2 minutes of each side).  Meanwhile, toss together some lettuce with chopped bell pepper, tomatoes and dressing of choice.  Plate it all together and eat!

Quick dinner idea number 3: Just go out to eat! Life is hectic sometimes.  Give yourself a break and let someone else cook for you!

…and then while we were looking at the dessert counter we struck up conversation with a nice man and he insisted on buying us a slice of his favorite cake.  It sounds creepy, but he was just nice.  But quite honestly I think I need to introduce this guy to an epic cake, because this slice was completely meh.

Last quick dinner idea: cheesy 2 egg omelet + avocado toast + watermelon.

  1. You know, I always forget about polenta. I really enjoy it, and it almost never occurs to me to buy it. Good reminder!

  2. My favorite quick meal go-to is personal pizza! I buy small crusts and top with pizza sauce, mozzarella, parmesan, feta, broccoli, tomatoes, bell peppers, and pesto! So easy and so delicious!

  3. I am guilty of eating oatmeal and egg sandwiches for dinner. One close to 15 min I like to make is veggie curry. 1-2 tbsp. curry paste, can of chickpeas, and a can of coconut milk plus whatever veggies are in the fridge. Heat it up and dinner is served.

  4. Leftover pasta tossed in to the pan as I finish scrambling some eggs. A lil’ goat cheese and basil or cilantro. Crush up some tortilla chips on top. Ba-boom.

  5. Love making eggs and avo toast for a quick and easy meal! Also great idea with the quesadilla. Those falafels sound amazing too, same with that salad!

One 15-Minute dinner I just made that I will definitely make again is 10 min farro (I get mine at Trader Joe’s), chopped tofu pan fried in tuscan herb olive oil (or olive oil +italian seasoning), chopped tomato and frozen zucchini (warmed in the microwave) combined in a bowl and topped with feta and fresh basil.
