It’s cookie time.
I have a soft-warm spot for soft-warm-doughy cookies. And I really love small-batch cookies because they allow you to have a plethora of cookie variety in your life. Maybe tonight is a chocolate chip pb cookie kind of night. And perhaps later this week will be a double chocolate cookie kind of night (simply add 1 tablespoon of cocoa powder to this recipe for that chocolatey option).
So. I’ve been making this recipe for a couple weeks now and finally decided to share. It whips up in no time at all. Like you are only 15 minutes away from cookie time. So speedy.
Andrew still doesn’t like the peanut butter and chocolate combination. And I still don’t understand him.
In the mean time, I will keep making this cookie until he comes around.

Yield: makes 2 cookies
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
3 tablespoons sugar
1 tablespoon butter, softened
1 tablespoon peanut butter
1 egg yolk
1/4 teaspoon vanilla
1/4 cup all-purpose flour
1/4 teaspoon baking soda
pinch salt
1/2 tablespoon milk
3 tablespoon chocolate chips
Preheat oven to 350ºF. In a bowl, combine all ingredients until a dough forms. Roll into two balls and bake for 9-11 minutes. As the usual cookie recipe directions ends..."whatever you do, don't over bake these."
