No-bake Chocolate Peanut Butter Sliced Oatmeal Cookies

AKA chocolate sushi!

How gross does that sound lol? But I mean, I couldn’t not address it.  These totally look like a sushi roll!  Now that you have that visual in your head, I’ve probably ruined this recipe for you.  But fortunately, we can use cognitive behavioral therapy to reframe the thoughts we have and help us live a better life.  So let’s reframe the thought of “this snack looks like chocolate sushi” to “this snack looks epic because anything with peanut butter and chocolate is epic.”  Okay.  Good.  Moving on.

I don’t think this is the weirdest recipe I’ve made, but I was doubting the photogenic-ness of these while I was making them.  You end up with this log of cookie dough that does not look appetizing in the least.  BUT HOLD ON! Don’t leave.  You should make these.  Don’t judge a book by it’s cover…or something like that.  Because no matter what character flaw a recipe has, it can be overlooked because of chocolate + peanut butter.

This recipe.  I do recommend that you use quick oats and NOT rolled oats.  When I made these with rolled oats, the oats didn’t soften quite enough.  So don’t make that mistake.

If you use quick oats, these end up fudgy.  And it should be noted that these are in the running for food-you-can-eat-at-every-meal award.  I have had these paired with fruit + a latte for a breakfast.  I’ve eaten them at snacktime with a latte.  I’ve eaten them at snacktime without a latte.  I’ve had these at midnight when I randomly woke up hungry.  I’ve had these for a sweet something after lunch just because I wanted a sweet something.  For all the meals and snacks, these cookies work.  They are like the easy-going cookie in that they are up for being any meal/snack.

Question: do you have to add the sprinkles?

My reply: if you hate fun, feel free to leave off the sprinkles.

No-bake Chocolate Peanut Butter Sliced Oatmeal Cookies

Yield: a dozen cookies

Total Time: 15 minutes (+30 minutes chill time)

Ingredients:

1 1/3 cup quick oats
2/3 cup peanut butter
1/2 cup chocolate chips (dark or milk chocolate works)
1/4 cup dark cocoa powder
1/4 teaspoon salt
3 tablespoons maple syrup
1 teaspoon vanilla (i used Rodelle)
1-2 tablespoons milk
sprinkles

Directions:

In a microwave safe bowl, combine peanut butter with chocolate chips.  Microwave until melted (stirring every 15 seconds to keep the chocolate from burning).  Now combine quick oats, chocolate-PB, cocoa powder, salt, maple syrup and vanilla.  Stir until combined.  Now.  If your dough is dry and would not stick together, add 1-2 tablespoons of milk to help the dough stick together better.  Then roll the dough into a log.  Get a piece of non-stick wrap and pour out sprinkles onto it.  Then place the dough log onto it and press the sprinkles into all sides.  Wrap up the sprinkle bedazzled dough and place in the fridge for at least 30 minutes (or overnight).  Slice and ENJOY!

Store these guys in the fridge.

  2. Does it make me weird that the ” chocolate sushi” reference still sounded good to me? Haha I immediately thought of sushi, but I think they look super appetizing! And yes to sprinkles. Always.

  11. You know how much I needed these? I had everything except the chocolate chips, so I searched the kids’ secret stashes and found one lonely chocolate mint candy bar. I almost, almost used it. (Mint and peanut butter? That’s true desperation.)

    So I substituted by adding a tablespoon of oil to simulate the fat in the chocolate and because the “batter” was a little dry (okay, I lied on the “I had everything”) (also because I’d used thick old-fashioned rolled oats pulverized in my Ninja), anyway, because of those changes I also added a splodge of corn syrup (it was there, and I was desperate) and WOW great cookie dough! Oh. And the cookies had plenty of chocolate punch despite my machinations, which you’ll note gave no additional chocolate flavor anyway.

    THEY WERE FABULOUS THANK YOU FOR SAVING MY OTHERWISE CHOCOLATE-DEPRIVED DAY!
