lake weekend eats
We spent the weekend at my parent’s lake house with my 2 best college friends. Both of them were bridesmaids in my wedding and I LOVE when we all get together (they are the girls I spent 39 hours in New York City with ages ago). Everyone is married now, so it was a weekend triple date.
We got to the lake house and my dad had left these out for us:)…
This was the first time we’ve been at the lake without my parents, so we got to sleep in their bedroom and wake up to this view. So dreamy.
We divided up meals between the couples, which worked out great. Saturday morning Andrew and I made breakfast tacos for everyone. First we crisped the tortillas in a bit of butter. Such a pro tip.
Served with a latte and the epic-est bacon from Whole Foods. It’s their black forest bacon and it’s my fav.
For lunch, my friend Kalyn made us all yummy caesar chicken sandwiches + sweet potato fries.
There were plenty of snacks eaten throughout the day.
Unicorn bait cookies.
Black pepper triscuits + sharp cheddar cheese + asiago cheese.
Vanilla latte #2 of the day.
For dinner my friend Donika + her husband made us pizza. They have this epic pizza maker they got as a gift from Sur La Table.
Everyone rolled out their own dough and added their own toppings. It was a lot of fun. I SO wanna get us one of those pizza maker. It was so cool and made THE best pizza.
I topped my pizza with pesto, homemade pizza sauce, mozzarella, pepperoni, chicken, bacon, basil and parmesan. Turned out great.
(say, “hello” to Mr. Goose.)
Then we played games. And we drank too much (well. the girls drank too much, while the boys let us reminisce about old times and laugh non-stop).
At some point I got out some Ben & Jerry’s and the three of us ate outta the pint.
Man. It was so good getting to catch up with them. Both of them mean the world to me.
Sunday we woke up and made pancakes. Topped with fruit, nutella and chocolate chips.
Snack later…
Then we cleaned up the house and headed back to Houston. For lunch we had leftover pizza and salad.
Afternoon snack = latte + cookie.
Dinner Sunday night was SO much fun. A new restaurant, Union Kitchen, opened near our house and I’m PUMPED about it. Our neighborhood is lacking in the restaurant department, so I’m happy there is a delicious place to go now. It was a bit pricey, but I’ll take it. A taco place is going in near us, so that’ll be great once that’s open.
For dinner Andrew and I got a bunch of plates to split.
charred brussel in a dijon dressing + parmesan.
caprese salad.
carnitas potstickers (These were a snooze-fest. I wouldn’t order them again.).
EPIC fried asparagus topped with shrimp, crab meat & blue cheese. (would 100% order again.)
After dinner Andrew and I went to Trader Joes. I usually have to beg Andrew to go to Trader Joes because he’s logical and I’m not. We usually spend more money there and it’s not in a convenient location AT ALL for us…so it just doesn’t make a lot of sense to do our grocery shopping there. But occasionally the universe aligns and we both get excited to go there for groceries.
If you have a Trader Joe’s near you, have you had their Sweet Potato Gnocchi? It is my favorite thing they sell! We usually serve it with asparagus and shredded rotisserie chicken. SO GOOD.
It was a good weekend. After two weekends away, I am ready to have some down time next weekend.
In other news…We just watched the first two episodes of This is Us. I balled my eyes out at the end of the first episode. Andrew said he didn’t want to watch it, but now he’s totally invested lol. I have mixed feelings about it. I love Mandy Moore, but I don’t like anything that shows/encourages diet mentality. I’m pretty careful about what I expose my ears/eyes to…I don’t like having any diet mentality crap in my life. Anyways. I plan to keep watching. Have you watched it? Do you like it?

I love This Is Us!! Wait until you watch the third episode! It’s the best so far in my opinion. I agree about the diet mentality, but I also think that storyline is a great example of how that can negatively impact a child long into their life.
I love the idea of couples cooking a meal each. Less stress for all. Those chicken salad sandwiches look so good.
I KNOW! While I was watching I was thinking, “this is just like client so-and-so’s childhood/mother.”

Keep watching this is us! It kind of strays away from the dieting and goes to just living life. The plot in general becomes increasingly beautiful and I cry every episode! Let us know if you continue to watch! ❤️
