Vegan Cookie Dough (for one.)

Phew. I’m exhausted tonight…so let’s get right to it since I feel this recipe is going to be better than my words.

I feel like recipes like this (i.e. single serving AND cookie dough) are the types of recipes this blog was founded on lol. You know? If you have been around since my early days, I’d love to see a comment from you telling me when you started reading…if you remember:)

I made this recipe on a whim one night when I wanted dessert but also was craving some creativity in my life.  It came out great, which is why I’m hearing telling ya alllllll about it.

I’ve been an oat flour fan for FOREVER.  Or for like 5 years ago when I first discovered oat flour was a thing.  I love the taste and how soft it is…ya know?

If you are thinking, “is that an Anthropologie bag in the above photo being used as a photo base?” Why yes.  Yes it is.  Watercolor patterns for LIFE.

Anyways.  Into this goes oat flour, brown sugar (i would NOT replace the brown sugar with maple syrup because you need that gritty raw sugar texture to make this recipe seem like true cookie dough)…and in goes some other ingredients that you most likely have on had.  Easy peasy lemon squeezy.

If the cookie dough seems dry…JUST KEEP STIRRING.  It’ll get there.  ‘There’ being cookie dough deliciousness.

Vegan Cookie Dough

Yield: serves 1 (not a very large serving tho. Feel free to double!)

Total Time: 3 minutes

Ingredients:

3 tbsp oat flour
1 tbsp coconut oil, softened
1/2 tbsp brown sugar
1/2 tbsp maple syrup
2ish drops vanilla (i use Rodelle)
pinch salt
chocolate chips 

Directions:

In a bowl combine all ingredients until a dough forms.  If the dough seems dry...keep stirring.  It'll be fine.  Once a dough forms-->eat!

  5. I just scrolled back through to try to find the first recipe I ever remember seeing/making. I got to page 90 (NINETY!?- Should I be working right now instead of scrolling through 90 pages of your past blog posts…yes…) and realized the Carrot Cake Truffles were the recipe that led me to you, three years ago.
    As a long-time ball-lover (uhhhhhhh?) I actually loved scrolling back through all your cookie dough/energy balls/ truffles/ etc. I’m definitely snacking on this cookie dough today, though. Single-serving cookie dough is pretty much my spirit animal. Keep ’em coming!

Anything cookie dough + single serving is my JAM!!  Those sort of recipes (and anything raw!) are my favorites.  My only regret is that this is EXACTLY what I was craving last night when the restaurant we ate at were out of the skillet cookie I wanted and I decided to have dessert at home.  Ah well, maybe tonight! ??
