What is your go-to EASY dinner?

I feel like enchiladas are one of my go-to easy dinner recipes.  There are times I’m just over going out to eat and would rather be in my pajamas at home making an easy dinner.  I recently made enchiladas divorciadas, which just means enchiladas that have two different kinds of sauces on top.  They are great for my indecisiveness when I can’t decide it I want red salsa or green salsa.  And they are super easy to make.  All you need is 9 ingredients:

rotisserie chicken
bell pepper, roughly chopped
red onion, roughly chopped
two salsas
toppings of choice: cilantro and radishes

I sautéed together the bell peppers, red onions, and cumin in some olive oil.

Then into the tortillas I put shredded chicken, cheese, and the sautéed veggies.  

Then rolled them all up nice and cozy.

Pour over your two types of salsa.

On top I put cheese…

Then cover with foil and bake at 350ºF for 30 minutes.  Top with radishes and cilantro.  SERVE!

  1. Breakfast for dinner! Just had pancakes, eggs and bacon for national pancake day! 😀

  2. Burrito bowls! I use either potatoes I roasted over the weekend or nuke a couple of potatoes, or leftover rice, whatever is on hand as the base. Then in a pan throw in some black beans, onion, garlic, cumin, chipotle chili powder and some of whatever greens I have on hand. Sauté, add them on top of the base, then scramble a couple of eggs in the same pan and top everything with green Tabasco. Yummm.

  3. My two go to dinners for quick and easy dinners are nachos with either meat or beans, sautéed onions plus other veggies on hand, and shredded cheese OR fried rice with onions plus other veggies, possibly a meat, lots of scrambled egg. 

  4. Definitely eggs mixed with veggies and a microwaved sweet potato! My go to when I need to buy groceries too.

  5. We love enchiladas and tacos in our house! They come together so quickly and you can use a variety of different flavors and ingredients!

  6. One of my favorite go to recipes that I think you’d love is Daily Garnish’s Enchaladia Bake. It’s so easy. Sautéed kale and mushrooms (or any veggie) and then you mix it with quinoa and a jar of enchilada sauce. Shred cheese on top and bake! You should look it up!

  8. Love making cheesy egg scrambles with veggies for dinner or zoodles with meat sauce.

    For a while I was also on a quesadilla kick. I liked to get creative and theme them differently like greek quesadillas, mexican, italian — whatever I had on hand that day!

  9. Always a chicken sausage (kept in my freezer) stuffed into a baked sweet potato with whatever toppings I have! Usually guacamole and things like that. Whatever frozen veg I have on the side. Works every time!

  10. One of our easy favorites is a salad bar. We clean out the fridge of whatever meat, cheese, and veggies need to be used up, and my family and I build our own custom salad bowls. The best! Another favorite is curry chicken salad. We make a big batch so we have leftovers, and then people can put it on sandwiches, in a wrap, or on a bed of salad greens (my personal favorite way to enjoy it). :D

  11. If it’s dinner for myself wilted greens (spinach, kale, whatever is in the fridge), a sweet potato, and a fried egg. If I microwave the potato, it take like 10 min max.

    For the hubby and I: Annie’s mac and cheese with broccoli/spinach/peas and chicken sausage, turkey burgers and microwaved frozen green veggie (broccoli, green beans, brussels), a frittata using whatever veggies I have, or whole wheat pasta with ground turkey sauce and a salad. All of these take less than 20 min to make and I usually have it on hand. Easy and fast.

  12. I love making pizza so much and it’s something my hubby and I can do together for a comfy, at home, low-key dinner.. for sure in pjs!

  13. I always keep leftover turkey chili in the freezer. Easy to put on a baked potato or eat with avocado and tortilla chips!

  14. Why do I always thing of Enchiladas as a hard recipe?! They’re so easy! My go to easy meal is rice, beans, roasted veggies and a fun condiment. AKA no cooking necessary haha!

  15. Baked potato, baked beans and cheese is a such a quick and delicious dinner. Also getting a pre marinated tofu and crumbling it with cheese and salsa on tortillas to make a quesadilla. 
    I also love to sauté loads of veggies together with olive oil and mixed Italian herbs, toss with more olive oil and pasta and then top with cheese. Obviously cheese is involved in all quick meals, because, cheeeese…. 

  16. Mine is breakfast tacos for dinner! Some frozen crumbled turkey sausage, scrambled egg, and spinach, served in corn tortillas with salsa on top. So quick and delicious!
