The best oatmeal I’ve made in a while.

I made this oatmeal last week and thought it was so tasty.

It’s not really that unique of a recipe.  So I have no doubt that you may have already made this exact recipe a million times, but I’m gonna share it anyways.  You know, just in case you haven’t whipped banana, peanut butter, and creamer into your oatmeal.  Because if you haven’t, you should.

And since tomorrow is Nov 1st (omgsh yay!) you could add a tablespoon of pumpkin puree to make this oh so fall esque.

Perhaps next time I’ll remember to clean the knob part of my stove before taking photos.  Probably not.

Super Duper Creamy Peanut Butter Chocolate Chip Oatmeal

Yield: serves 1

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

1/2 cup rolled oats
1 cup 2% milk
1/2 banana, thinly sliced
pour vanilla creamer (I used Natural Bliss Vanilla Creamer)
spoonful peanut butter (i'd say I put 1-2 tbsp peanut butter)
1/4 tsp cinnamon
1/4 tsp vanilla
pinch salt
mini chocolate chips

Directions:

In a saucepan, combine all ingredients except for the chocolate chips.  Cook over medium heat, stirring constantly, until oats are thick & creamy.  Pour into a bowl and top with chocolate chips.

If you are in disordered eating recovery and when you see, "use 1-2 tbsp peanut butter" you immediately think, "okay then I'll use the minimum and only put 1 tbsp peanut butter."  I'd challenge you to add 2 tbsp instead :)

…and I’m still pregnant.

  3. Had this for breakfast this morning! A chilly 38-degree morning in Boston and per your recommendation I wasn’t rigid about the tbsp situation with the peanut butter :) So delicious and lovely, sometimes the simplest things are the best.

  4. I’ve been enjoying oatmeal lately with brown sugar, milk and walnuts. Simple but good!

    Have you tried latte oatmeal? I’ve seen a recipe floating around but haven’t tried it. I’m intrigued!

  5. I made this for breakfast yesterday because I HAD to have it right away after I read the recipe!! I didn’t have any creamer but I added in some whole milk and topped with half a sliced honeyrcrisp apple and a pour of maple syrup (in addition to the chocolate chips, of course!) It was soooo delicious and will def be one of my new go-tos! I have always made oatmeal with water but gosh it was creamy with milk!!     • I really like your idea of topping with an apple and maple syrup! Might do this tomorrow! Ever since Kylie suggested it I’ve been making mine with milk too!
