I didn’t prep any recipes or content ahead of Jo’s arrival. I tried to, but it just didn’t work out…mainly because of all the down/sad feelings I had throughout pregnancy. My down mood made it hard to get organized and pre-plan. So today my dad came over during one of Jojo’s many naptimes and he kept an eye on her while I took some time to make and photograph this. And then he went and got us Chipotle for lunch…DAD WIN<3
This recipe idea had been brewing in my mind for awhile now because I thought cookie butter + white chocolate would pair SO good together. And I’m happy to report it totally does.
So for this recipe you melt together Trader Joe’s cookie butter and white chocolate. I’m a big fan of cookie butter around the holidays, it’s just so gingerbread-y and holiday-y. So you melt the two together and then coat an apple in a nice thick layer of it.
Next up: Press some walnuts into the cookie butter goodness…
…and then drizzle on some chocolate…
I’m calling this recipe an upgraded caramel apple because, you know, nothing says holiday cheer like an upgraded caramel apple. I actually think this would make an excellent DIY holiday gift. You’d just need to find a clear bag and some pretty ribbon to package it in!
White Chocolate Cookie Butter Apple
Yield: makes 2 large tasty apples
Total Time: 30 minutes
16oz white chocolate chips
1/4 cup Trader Joe's cookie butter
1/2 cup walnuts, roughly chopped
1 cup dark or milk chocolate chips, melted
2 as-big-as-your-face honeycrisp apples
In a double-boiler, melt white chocolate chips and then stir in cookie butter. Stick a chopstick into each apple so you can dip it. Dip each apple into the white chocolate-cookie butter mixture until each is coated. Press walnuts into the white chocolate-cookie butter mixture and then drizzle with melted chocolate. Place in the fridge until the chocolate hardens. Slice and serve.
