really good croutons and a really good salad.

Growing up I loved have croutons for a snack.  Nothing paired with them, just croutons all by their delicious lonesome self.  

I started thinking awhile ago how there are a few dishes I’d like to be able to make really well.  Some things I’d like to have an excellent go-to recipe for are: enchiladas, pizza dough, an epic chicken recipe, chocolate chip cookies, breakfast tacos and…croutons.  So this crouton post was born out of me perfecting my crouton recipe.

I was thinking about the best croutons I’d ever had and I thought about croutons I’d had in the past at some restaurants that always seemed so soft, yet still crispy.  Some googling revealed that butter was the key ingredient for making soft, yet still crispy croutons and I can confirm that yeppppppp butter does the trick.

These croutons came out delicious and are worth trying.  They are excellent warm and fresh out of the oven, but if you’re meal prepping on the weekend these croutons could be made a couple days ahead of time. I hope you try them.

really good croutons

Yield: some croutons (enough for at least 2 dinner-sized salads)

Ingredients:

croutons
1/4 cup butter
4 slices french bread sliced into 1"-ish cubes
1/4 teaspoon garlic powder

salad
cantaloupe
blue cheese crumbles
arugula
walnuts
dressing: olive oil, balsamic vinegar, honey, salt/pepper

Directions:

Preheat oven to 375ºF. In a saucepan over medium heat, melt butter.  Once melted, add in cubes of french bread and garlic powder.  Gently stir to coat all bread in the butter and garlic.  Spread bread cubes on a foil-lined baking sheet.  Cook in oven for 10-15 minutes, or until golden brown.  Flip/stir croutons halfway through cooking time.

  3. I LOVE homemade croutons. Growing up, my mom would take stale-ish sourdough leftovers and saute them in a hot skillet with equal parts butter and olive oil. So crisp and chewy and gaaaahh so good. Also, you know you’re going to have so many questions about where you got those cloth napkins…they’re amazing!

  4. You crack me up and I think we are soulmates on SO many levels!!!  I used to come home after school and eat a box of croutons for a snack….(that was well before my ED). Can’t remember the brand, but they had a recipe on the back of the box for a breakfast casserole using them, that I always thought sounded good!  Maybe you can get your creative juices flowing and make a recipe!!! lol

  5. Looks awesome! I like croutons but I think they are harder to do in advance because I don’t like them soggy. Also you said you were looking for a perfect chocolate chip cookie recipe. This one is strange because of what you’re supposed to do with the butter, but trust me it’s the best one in the world, particularly if you like toffee flavors. I had tried a ton of recipes but this is “the one” .

      I also really like the one from Pinch of Yum, I make that one when I don’t feel like messing around with browning butter lol

  6. I love the idea of having some staple go-to recipes! My mom has the most amazing chicken recipe…I’d love to come up with my own list now too. Perfect to have go-to ideas for guests.

  8. Fun story. Growing up, my brother and I really liked to snack on croutons too. We also liked to snack on chocolate milk. One day, my brother decided that since he liked croutons, and also liked chocolate milk, he was going to mix them together. My mom warned him that wasn’t his brightest idea, and if he was going to waste food like that, he had to eat it. I think he got 1/4th of the way through before crying his way out of that one.
