Pancake Mix Muffins

I was up at 4:30am Monday morning, so why not make muffins and take photos of them. And because it was 4:30am, this recipe makes 11 muffins. Not a dozen. 11.

This isn’t my first time using pancake mix to make something that isn’t pancakes. Growing up we’d use pancake mix to make cinnamon rolls, a childhood favorite of mine born from my mom’s creative brain.

I wanted a good go-to muffin recipe that I can easily switch up to match my cravings and this one may be it! I hope you enjoy them too!

Pancake Mix Muffins

Yield: 11 muffins (lol)


dry ingredients
2 cups pancake mix (I used Kodiak Cakes Buttermilk Mix)
1/2 cup brown sugar, packed
1/2 cup mix-ins of choice (I used walnuts, chocolate chips, sweetened coconut)
dash cinnamon

wet ingredients
1 cup whole milk
1 egg, whisked
1/4 cup vegetable oil
1 tsp vanilla extract


Preheat oven to 350F. In a bowl, combine dry ingredients. Add in wet ingredients and mix until just combined. Fill your greased muffin tins with batter (I only filled up 11 tins because I like my muffins to have solid muffin tops). Fill any muffin tins with water before you place in the oven to bake. Bake for 18-20 minutes.

  1. I made a similar recipe the other night after seeing you had posted a picture of these – I chopped up old apples and added them to the mix and then mixed together chopped pecans, brown sugar, regular sugar and butter for a little sweetness on top. Yum!

  2. I was accepted into Kodiak Cakes RD Program, and I have three boxes of their delicious mixes. I plan to make muffins and then plenty of waffles and pancakes to freeze!

  3. This is perfect! I live in a little apartment so I don’t have the normal pantry items (flour/sugar/etc.) but a mix is easy to keep! Have you ever tried banana bread recipes with premade mixes like this? :)

  4. Such a brilliant idea! I remember seeing your pancake mix cinnamon roll recipe a while back too. Definitely creative. I don’t make a whole lot of “dough” type recipes because honestly, yeast is intimidating! lol. But using pancake mix seems a lot easier haha! These muffins look awesome too. We love Kodiak cakes and always keep a costco-sized box on hand. I’ll definitely be trying this!

  6. I modified this recipie slightly. I used members mark pancake mix and added a 1/2 teaspoon of baking powder since my pancake mix was a bit aged. I used evaporated milk diluted into one cup of water. I also made a chocolate version. Added a half cup of hersheys cocoa powder. 1 teaspoon of baking powder. 1/2 teasppon salt, 1 cup sugar, and 2 teaspoons of vanilla essence and used only 1 cup water instead of milk plus a 1/4 cup of hot water. All other ingredients i kept.
