The hardest part of making pizza is the crust.  If you use naan for crust your life becomes SO simple.

What else should I tell you.  

I PUT AN EGG ON IT.  Which is something everyone does know, but I don’t do it that much so it feels new and exciting.  The whole ‘put an egg on it’ trend isn’t really my favorite.  I’m so not a runny yolk person.  Scrambled eggs > sunny side up eggs.  I would only go with a fried egg because it would look pretty in a instagram picture.  True.

But the egg on this pizza worked for me, so maybe I’m a changed person.

Things you should know about me include: My favorite pizza is pizza with multiple cheeses.  Do not give me plain ol’ mozzarella on a pizza.  What a snooze-fest.  So to avoid a boring pizza, onto this pizza went parmesan, extra sharp white cheddar and goat cheese.   All the cheese flavors.  And you know what they say…”cheese variety is the spice of life”.

This pizza makes an excellent easy, peasy dinner on a weeknight.  See what I did there, PEAsy.  It’s topped with snap peas that you sautè until they’re nice and soft and have a pretty color to them.

Sauteed Sugar Snap Pea & Goat Cheese Naan Pizza

Yield: makes 1 naan pizza

Prep Time: 5 minutes

Cook Time: 12 minutes

Total Time: 17 minutes

Ingredients:

1 naan bread
1 cup sugar snap peas, remove stem end and string
scant tablespoon olive oil
pizza sauce
parmesan
extra sharp cheddar
goat cheese
1 egg

Directions:

Preheat oven to 400ºF.  Saute sugar snap peas in olive oil over medium heat until the soften and get a nice golden brown sear on them.  Top naan with pizza sauce, cheeses and sautéed sugar snap peas.  Make a little well in the center and crack on the egg.  Bake for 12 minutes, or until egg is set.  You make need to cover the edges of the crust with foil to keep them from burning.

  5. YES to the multi-cheese pizza! I’m all about the additional flavor (and goo) and am loving the cheddar-goat cheese combo. I’m itching to pick up some naan from the store to make this thing happen ASAP. NEED that drippy egg!
