It’s time to fill your life (and jars) with homemade almond butter.
And chocolate chunks.
I know today is the day to eat long noodles for longevity, greens for prosperity, and black eyed peas for luck. And while this recipe has none of those things, I know almond butter will bring you joy in the new year because it’s completely delish. AND it’s completely easy. Probably not as easy as just buying a jar of almond butter from the grocery store, but just think(!!!), if you make you’re own almond butter you’ll finally know where almond butter comes from! It comes from the food processor! (false.)
So today Andrew and I are taking it easy. We woke up at 10:30 and he made us store-bought cinnamon rolls because he loves the things, whereas I find them a bit meh, but whatev.
Now we’re doing nothing and it’s nice.
I do plan to eventually open a journal today and ponder a bit on this Alice in Wonderland scenario.

I want to sit down and figure out what in the world I’m working towards. I feel like your 20’s are a confusing time where you figure out what you’re doing with your life, who you’re supposed to be friends with (who you’re not supposed to be friends with), who you’re supposed to be, if you should do a kitchen remodel, how to invest in relationships more, when you should have kids, and how to be more of yourself.
I mean, what do I want from my career, but more importantly, what do I want from me?! It’s hard to get somewhere if you don’t know where you’re going. So today I’m gonna spend a bit of time pondering that.
For now. Life seems pretty straight forward. In that here’s an almond butter recipe, you should make it.
For this recipe, I used Blue Diamond’s Honey Roasted and Lightly Salted Almonds. But then I was like WHOA. You could really use any Blue Diamond flavored almonds for this recipe. Like you could make Sriracha almond butter, which really has me curious.
But for now…honey roasted chocolate chunk is what’s going in the jar.
Yield: 1 1/2 cups almond butter
Total Time: 10 minutes
1, 6-oz container Blue Diamond Honey Roasted Almonds
1, 6-oz container Blue Diamond Lightly Salted Almonds
1/4 teaspoon vanilla extract
2 tablespoons dark chocolate, chopped
In a food processor, process together almonds and vanilla until smooth. Allow to cool for 10 minutes, then stir in dark chocolate chunks. Store in the fridge and eat on a plethora of things. Lately my favorite has been a slather on top of a cinnamon raisin english muffin.
