weekend adventure
Last weekend we had a wedding to go to in Waco, Texas. Waco is about 3 hours away from Houston. It’s the town where Fixer Upper is filmed!
The wedding wasn’t until Saturday night, so Friday night Andrew and I went to Dish Society for a double date with friends. I got the fried chicken kale Caesar salad. After dinner I went over to another friend’s house to hangout…and drink champagne. Such a fun Friday night. I didn’t get home until after midnight lol. I haven’t done that in awhile.
Saturday morning I got up and had HOT oatmeal! I hadn’t had plain ol’ hot oatmeal in forever. Cooked in milk and topped with bananas, Justin’s chocolate hazelnut butter and peanut butter + a latte on the side.
After breakfast I went to a pilates class at Defy. Their classes are so much fun.
After pilates I stopped and picked up lunch from Snap Kitchen for Andrew and me. Snap had sent me a giftcard a couple months ago that I finally got to use.
I was a bit disappointed by my lunch though. I used to work at Snap Kitchen when I was in undergrad (like 7 years ago) and I loved their goat cheese scramble. So that is what I got for lunch. But when I opened it, I realized that it is now made with egg whites:/ It was totally my fault…I should’ve read the label more carefully. It used to be made with tofu. I hate egg whites. HATE. So I had to add more cheese to make up for the lack of flavor from the egg whites. The sweet potatoes and goat cheese were good though!
Paired with a kombucha and some kale chips from Snap that were awesome.
Kale chips were Bombay Ranch flavor. The kale chip coating was made from cashews, sunflower seeds, garlic, basil and nutritional yeast. SO GOOD!
After lunch I satisfied my sweet tooth with a Justin’s PB cup.
Then we loaded up the car and headed to Waco.
Road trip snacks were…
We met up with Andrew’s parents (they were attending the wedding too) and got our things settled. We stayed with them for the night in their Airstream!
We freshened up, changed and headed to the wedding.

After the wedding ceremony we headed to the reception. The wedding was for one of Andrew’s friends from childhood.
At the reception they had a mac & cheese bar! So fun.
DINNER. Salad + veggies + beef + 2 dipping sauces + bread + wine.
We ended up not staying for cake (i know that’s bad luck or something), but I was way full and didn’t miss not trying the wedding cake/groom’s cake.
Back to the Airstream to sleep:)

The Airstream really works great for sleeping 4. Andrew’s parents have a bedroom in the back and the couches in the front convert into beds.
We all fell asleep while watching Seinfeld.
The next morning we got up and headed to breakfast at Cafe Cappuccino.
I got a swiss vanilla almond latte + a french toastwich.
Andrew got a chocolate chip banana pancake. (i really don’t get that excited for pancakes, but Andrew loves diner-style pancakes like this.)
Then we made the 3 hour drive back to Houston and stopped at Smashburger for lunch. I was craving burgers!
Also on the drive home I was perusing IG and I kept seeing egg clouds like the below picture. I want to try! I’ve never even heard of these before. You whisk up the egg whites and then bake them.
Oh.
And I came across these shoes and love them.
And I really want a giant floor pouf like one of these, but these cost $450 and that’s totally not happening.

I love this kind of post, a mix of at home meals with some dining out recommendations. Mac and cheese bar is such a good idea, how fun!

Okay are pancakes like that a US thing? Cause I’ve NEVER seen a pancake that big! Up here they give you waaaay too much food if you order pancakes but it’s usually three or four smaller (but quite big still just not huge like that) ones stacked. I’ve never actually seen a restaurant that just does one…
