Sautéed Veggie Salad with Cheesy Black Bean Quesadillas
Ohhh hay, easy weeknight dinner!
Have you tried Goya’s black bean soup? Man. It is the most delicious store-bought black bean soup I’ve ever found. We always have a couple cans of it in our pantry for easy dinners.
And this recipe right here is one such easy dinner.
All ya gotta do is sauté up some veggies. Add in some fresh fruit. Then you got this fabulous sautéed salad thing that is made for summer because, ya know, fresh fruit. Pair it with a black bean & cheese filled quesadilla. IT’S DINNER!
Sautéed Veggie Salad with Cheesy Black Bean Quesadillas (an easy dinner!)
Yield: makes about 2 cups of salad
sautéed veggie salad
1 zucchini, quartered
half an yellow bell pepper, diced
1/4 a red onion, finely chopped
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp turmeric
couple dashes salt & pepper
couple radishes, thinly sliced
1 small orange, cut into ~1/2" pieces
1/4 of a lime, cut into ~1/2" pieces
1/2 tbsp red wine vinegar
1/2 lime, juiced
bunch of cilantro, roughly chopped
black bean quesadilla
extra sharp cheddar, grated
black beans (I actually love using Goya's black bean soup for all it's yummy flavor!)
Heat a sauté pan with olive oil over medium heat. Add in zucchini, bell pepper, and red onion. Cook until soft, ~8 minutes. Stir in cumin, chili powder, turmeric, salt and pepper. Scoop into a bowl and add in radishes, oranges, limes, red wine vinegar, lime, and cilantro. Mix it all together.
Make your quesadilla like you make a quesadilla. I make mine with a generous dose of cheese.
Serve sautéed veggie salad with your quesadillas. ENJOY!
