No matter how old I get, I don’t think I’ll ever reach an age where Disney isn’t comforting.
Because many times, comfort is found in the simple things.
For instance, a mickey mouse waffle maker.
…and, more importantly, the mickey mouse waffle…all grown up.*
*No, there is not alcohol in these.
Mickey Mouse Protein Waffles
serves 2 (…if you’re going to top them with greek yogurt, nut butter, fruit, etc. Otherwise, these just serve 1.)
inspired by the of-so-very-creative Edible Perspective
1 1/2 Tbsp ground flax
1 Tbsp coconut flour
1 scoop chocolate protein powder
1 egg + 2 egg whites
3 Tbsp almond milk
1/2 tsp cinnamon
1/2 tsp baking powder
Beat eggs. Add in remaining ingredients and mix until thoroughly combined. Allow batter to thicken for 10 minutes. Pour batter into your hot waffle maker and cook until done. Top hot waffle with your favorite toppings.
I topped mine with plain greek yogurt, blueberries, raisins, & a drizzle of maple syrup. Served with a side of strawberries and macadamia nuts.
Ooo yum! This is so nostalgic for me. When I was little my sister and I used to get Mickey mouse “shaped” pancakes that my grandma made and we LOVED it! I will totally try this recipe when I get a waffle maker!
Hey Heather! I’m glad I could bring back some happy memories:) Definitely go for the mickey mouse waffle maker when you buy one!:)
This blog was… how do you say it? Relevant!! Finally I’ve found something that helped me. Kudos!
It makes me so happy to hear that!!:) Thank you!
Oh my gosh!!! I need this waffle maker!! I am obsessed with Disney :) Where did you get it?
Hi Ashley:) We’ve had the waffle maker for like 10 years so I’m not exactly sure where we got that one from! But I found one at Bed Bath & Beyond…http://www.bedbathandbeyond.com/product.asp?SKU=18332973
The kid I used to babysit when younger used to want batman pancakes and his mom bought them all the time (they were a “speciality item” at the time). Imagine a Batman waffle maker, ha.
What kind of protein powder do you use? And how many grams is in one scoop? (20 g or 30 g scoop?).
Hey Gina! I’m sure we could find a Batman waffle maker on Ebay:)
I switch up protein powders really frequently. I’m constantly trying to find one that I am completely happy with.
Right now I’m using this…http://www.abbottstore.com/eas+174-100-whey-protein-chocolate-58-servings/invt/59205e/. It’s a 100% Whey Protein with 13 grams of protein in one scoop. I try to avoid milk based proteins though because I think they give me headaches.
One of my favorite proteins that I’ve tried is an Egg based protein… http://www.dymatize.com/products/protein/detail/539/elite-egg-protein-2-lb/?back=products. This one didn’t give me headaches or hurt my stomach so I’m going to stick to this brand in the future. It has 24 grams of protein per scoop.
This recipe is great because you can really cater it to how much protein you want in your diet. Just change up the protein powder!
Hope this was helpful:) and have a great rest of your week!
Kids would love this blog and I have to say I am tempted too:) Thanks.
