Making (and eating) baked goods every week.

If it’s a week I have it together enough to meal and snack plan, I love planning a baked good to make for snack times.  Baking something each week sets me up to have a satisfying snack on hand, which I’m all for!

This week I was going to make some energy balls, but decided I was craving oatmeal cookies more than I was craving a no-bake something.  So here we are with this tasty recipe. 

I made these cookies a bit on the smaller side. Usually I like palm-sized cookies, but I made these energy ball sized and left them on the undercooked side (as all cookies should be left!).

What have you baked recently? At a dinner party I recently tried a lavender loaf cake.  I usually think lavender infused food/drinks taste like soap, but my tastebuds found it surprisingly good!

ONE BOWL Chocolate Chip Oatmeal Cookies

Yield: makes 12 cookies (that are on the smaller side)

Ingredients:

1 1/2 cup old-fashioned oats
1 cup all-purpose flour, spooned into measuring cup
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar, packed
1 egg
6 tablespoons butter
1/2 cup chocolate chips

Directions:

Preheat oven to 350ºF. In a large bowl, melt butter.  Add all other ingredients, adding chocolate chunks last so you don't put the chocolate straight into the hot butter and melt it.  Mix until a dough forms.  Make balls of cookie dough and place on a baking sheet.  Bake for 8-10 minutes, leaving slightly under baked.

    In recovery, I have discovered I am still unveiling fear foods. I think having something like a cookie/cookies as a snack or with a snack is a great way to neutralize the food while optimizing satisfaction! Win!

  5. I love this concept and these cookies look amazing! I made a batch of muffins a couple weeks ago and threw them in the freezer so I was super happy to have them available to defrost and eat this week! I love the Kodiak cakes muffin mix. Super easy and fool proof which I need most of the time.

    • After liking the loaf cake I’m more open to ordering lavender stuff now..except I’m still not big on lavender lattes. Too floral!

  11. These cookies look awesome. I never seem to snack much but what I love is cookies crumbled in a bowl with some almond milk and a banana, which makes for an awesome breakfast. Kind of like cookie crisp cereal but homemade. Weird, I know (and probably not the most nutritious breakfast), but oddly, doing this has helped with my eating disorder recovery. I haven’t figured out what it is (or even why I started doing this) but I don’t feel the guilt about eating sweet stuff.

Hi Kylie, thank you for sharing one of the easiest cookie recipes in the world to make and memorize! I halved the sugar content and it was still really sweet for me so will reduce it even further next time. I also added a bit of shredded coconut for flavor and texture. Love how customizable this receipe is.
