Making (and eating) baked goods every week.
If it’s a week I have it together enough to meal and snack plan, I love planning a baked good to make for snack times. Baking something each week sets me up to have a satisfying snack on hand, which I’m all for!
This week I was going to make some energy balls, but decided I was craving oatmeal cookies more than I was craving a no-bake something. So here we are with this tasty recipe.
I made these cookies a bit on the smaller side. Usually I like palm-sized cookies, but I made these energy ball sized and left them on the undercooked side (as all cookies should be left!).
What have you baked recently? At a dinner party I recently tried a lavender loaf cake. I usually think lavender infused food/drinks taste like soap, but my tastebuds found it surprisingly good!
ONE BOWL Chocolate Chip Oatmeal Cookies
Yield: makes 12 cookies (that are on the smaller side)
1 1/2 cup old-fashioned oats
1 cup all-purpose flour, spooned into measuring cup
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar, packed
6 tablespoons butter
1/2 cup chocolate chips
Preheat oven to 350ºF. In a large bowl, melt butter. Add all other ingredients, adding chocolate chunks last so you don't put the chocolate straight into the hot butter and melt it. Mix until a dough forms. Make balls of cookie dough and place on a baking sheet. Bake for 8-10 minutes, leaving slightly under baked.
