Chewy Pumpkin Snickerdoodle Cookies

A reader shared a recipe for chewy pumpkin snickerdoodle cookies and WOW they are phenomenal. I get a lot of dopamine from planning, even if the plan never plays out, so I have already planned my holiday baking list (see below), but I am revising it to include these now.

This pumpkin snickerdoodle recipe was interesting to make because it used a technique I had never thought to do, which was pressing the moisture from the pumpkin puree until it resembled play-dough. The 4 year old was the girl for the job!

I made these cookies smaller than I usually do and I liked them that way. Everyone agreed these were fantastic (except Leah who didn’t like them at all), so we blew through ’em in just over 24 hours. I can’t wait to make them again. The soft & chewy texture, the thoughtful recipe that added more character/flavor to the cookie with the browned butter + pressed pumpkin, and the classic snickerdoodle sugar coating…yum.

I 10/10 recommend!
