Peanut Butter Cookie Cereal + Chocolate Milk

This is one of those recipes I’ve been wanting to make for forever.

And I’m gonna tell you about it super quick because I’m at the airport typing this up and my flight boards in 15 minutes.  I would also like to tell you that I’m having my first Dunkin Donuts experience right this second, and I’m loving it.  I asked for a small latte with my breakfast sandwich and they made me a medium.  Happy accident.

So this recipe.

I’ve had this recipe idea written in my inspiration spiral for about a year.  My inspiration spiral is similar to my inspiration board except it’s far less pretty and far more a complete mess.  I actually have about 10 inspiration spirals that I’ve ended up with because I can’t say no to a pretty spiral cover and I’m so sure if I buy THAT spiral I’ll have better ideas.  It totally works like that.  Pretty spiral covers = pretty ideas to come.

You start by rolling out a bajillion little peanut butter cookie balls.  I recommend watching TV while you’re doing this…it takes a bit of time.  Preferably watch something classy like the Kardashians or reruns of the OC or Laguna Beach.  Clearly I’m all about the California.

Or leave the TV off and use this ball rolling time as a relaxation technique.  Yes, that could work.

Then bake until they puff up a bit.

Then scoop the cereal into a bowl and pour on some chocolate milk.

And there you have the best way to eat peanut butter and chocolate for breakfast.

Peanut Butter Cookie Cereal

Yield: serves 2-3

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

1 1/2 cup oat flour
1/2 cup peanut butter, salted
1/4 cup honey
6 tablespoons ripe banana, mashed
1 teaspoon vanilla
1 teaspoon baking powder

Directions:

Preheat oven to 350ºF.  In a bowl, combine all ingredients until a dough forms.  Turn on the TV or music and sit down and roll dough into marble sized balls.  This will take awhile and you'll get 50+ balls.  Space balls evenly on baking sheet and bake for 10 minutes.  Serve warm with chocolate milk poured over the top.
