Food we ate, Chapter 6.

Only going to put dinners we had here because 1) breakfast is my favorite meal of the day and I enjoy it so much that I don’t want to ruin the experience with having to document it and 2) I feel like dinner ideas are harder than breakfast ideas.

First up! Gatorade and saltines, for me. Blahhh. I had some type of stomach issue come up. I think I have a stomach ulcer.

For the family that night I was thinking Andrew would have to figure it out, but then Jo asked if she could have a snowcone from this local place that sells snowcones and pre-prepped meals, so I grabbed a lasagna for the family while there. I served this to them with what the kids call “crouton salad” lol (aka Caesar salad).

The next night I was feeling better after some meds! This was my favorite dinner of the week, I made Greek Chicken Burgers. Chicken patties on a bun + feta-tomato-caper-olive topping + pita chips. Served with oat balls in the middle of the table to minimize one screaming child who rejects everything I put in front of her and recently learned to roll her eyes lol…ALL THE DRAMA AND IT’S HILARIOUS.

Another night we had salmon croquettes (childhood nostalgic food for me!) + broccoli with cheese sauce. I think you’re supposed to make croquettes with breadcrumbs, but my mom always made them with crushed saltine crackers and they’re much better than breadcrumbs imo. I *loosely* followed this recipe.

I hadn’t tried serving the girls broccoli with cheese sauce before and they liked it! One child only wanted a plate of cheese, so I gave it to her. Alrighty then. She then lost it that I hadn’t put salmon on her plate too. If you’re guessing this was the three year old…yup.

Last night I had an Asian salad kit topped with a leftover chicken burger. The kids and Andrew had leftover lasagna, but there wasn’t enough for us all to have it and salad sounded good to me anyways. And the man I live with said that salads are not a meal. What a weirdo. :)

  1. That’s funny about the saltines and the croquettes as my mom used to use them for stuffing instead of bread and it was soo good!!
