Food we ate, Chapter 40.

With an alley-oop from omeprazole, my stomach is feeling a lot better. However, my body still needed a lot of bland food to begin the week. So, chicken + white rice. So boring. I hate this meal. Whatever. Glad I’m feeling better now.

Now on to the more delicious food from the week! Andrew and I had a date night and we went to Hopdoddy for burgers. Red meat is very off putting to me with whatever this stomach thing is, so I ended up getting a veggie burger and we split some buffalo + blue cheese fries. This was amazing. I can’t wait to eat this again. The bun was what my dream are made of! Soft, but sturdy…I don’t know how to describe it. So good.

We are still doing a lot of Vietnamese inspired dishes. Noodles, pickled carrots, cilantro, green onions, cucumbers, and rotisserie chicken with a sauce.

The rotisserie chicken comes out great if we baste it with a sauce and then broil it. Yum. This sauce was soy sauce, sesame oil (my all time favorite ingredient), BBQ sauce, fresh ginger, garlic…and I think that was it.

For lunches, Andrew had made a bunch of rice and steamed carrots…so I repurposed it multiple days into a fried rice type of dish.

For some breakfasts I had the pumpkin bread + latte.

One night I was so hungry after open house at the girls school. Oatmeal did not sound good, but I was too hungry to think about making anything else so oatmeal it was.

Afterwards I wanted something savory, so I made fried cheese with green onions. You just heat cheese in a pan until crispy. Do you do this? My grandma always used to make it for us. So good. So crunchy.

Other days I had fried cheese with an english muffin for a breakfast.

And here’s a random protein smoothie drank after a strength workout while driving to the post office.
