Food we ate, Chapter 39.

For the last couple years my parents have been giving us a case of THE BEST WINE for Christmas. I try to make it last all year. This was bottle 10 of 12. I love it paired with Asian influenced food. We served it here with fried rice that Andrew made that was GREAT. And I see I ended up capturing Leah perfectly between the ketchup and the soy sauce HAH!!

Saturday morning we woke up and were going through the list of what we could make the kids for breakfast and we were out of everything. Frozen waffles – gone. Pouches for Leah – gone. Milk – none! Eggs – zero. Cereal – gone. Bananas – no where to be seen! So we loaded up the kids and went and got lattes & kolaches.

I’ve been so fatigued with whatever this stomach thing is that I have – finally went to my PCP this week. I enjoy getting my doctor to, what I call, “break character,” which is basically just making her laugh. I was successful. I really like my PCP. She listens, she’s smart, she cares, she’s clear about when she doesn’t know something, and she’s not overly concerned about BMI, but rather weight stability and are you moving. Sooooo after I took a nap over the weekend I woke up to fried rice leftovers from the vat Andrew made and it was so great.

And lookie lookie more oatmeal/walnuts/bananas for breakfast + latte. It’s the only thing that sounds good right now!!

“Another one!”

After church we took all the children to Mexican food. Quesadillas for me! You can tell when a waiter has kids and when they don’t lol. Our waiter had 3 boys and he was great.

One night I was losing it in the afternoon, so I took the girls to Chick-Fil-A for an early dinner and they took out the play place in our Chick-Fil-A! We were so bummed!! Halfway through the meal, one of the kids said she felt like she was going to throw up so we had to sprint outta there. Fortunately, she didn’t, but I take the threat of vomit very, very seriously!! If a kid says their stomach hurts, I’m sprinting to get the vomit bowl, because I have been left without one one too many times.

So grateful these girls are all mine. It’s been great to see their confidence grow in very specific ways lately and see them become more and more them.

We have still be doing a lot of Vietnamese-inspired dishes. I made this ginger sauce and it was delish and just tasted like health (in a good way) with it being so ginger packed. The chicken on the rice was just pieces of rotisserie chicken that was basted in an Asian sauce and broiled. COMES OUT SO GOOD. Skin is crispy perfection.

One dinner we did a bunch of roasted things and called it dinner: Chickpeas, carrots, potatoes. Added ketchup.

For a morning snack I got a croissant from Tenfold. This works super great for a snack when I wake up before 5 am for whatever reason, so I have an early breakfast, and then come mid morning I’m super hungry.

I had made a big container of tuna salad and had it for a couple lunches. Served it dip style with chips.

We’ve also started committing to Taco Tuesday! See cutie baby foot below.

And we’ve all really been enjoying grapes for an easy snack. So good.

It’s morning for me, so I’m off to wake up the kids and get into our Friday. Hope you have a good weekend!
