Food we ate, Chapter 51.

Helloooo. We’re rounding out this year! Here’s what we’ve been eating.

With budgeting and children’s palates, spaghetti has become a staple:

And for another night, minus the broccoli.

And, again, but with chicken and brussels sprouts.

I’ve been eating a lot of museli with a pour of maple syrup on top. Had it for breakfast, lunch and dinner throughout last week.

Another breakfast has been toast + Starbucks egg bites that I found at Costco. And a coldbrew coffee with milk and creamer – as always.

An easy breakfast has been fried cheese toast (half eaten here) + light brown coffee lol. Pictured here with a fussy baby on my lap – she’s out of the 70 week leap and it’s brought a lot of relief. Phew, praise the Lord! She’s started floor tantrums and it’s just really wild how textbook development can be. A lot of my low mood was caused by how fatiguing having a baby crying at you for two weeks straight is. I’m glad she’s through it in time for Christmas and, another positive, the developmental leaps always bring so much, well, development!! New words. New behaviors. It’s fun to see!

Still doing a lot of Asian noodle dishes for dinner:

One night topped with an egg. A fussy baby was fed on the floor in the background when I was at the end of myself. Said food was then dumped on the floor and immediately eaten by Maggie.

One night topped with chicken.

For lunch, I’ve been doing turkey + swiss sandwiches and apple slices. Easy and good for taking on the go. Loving Dave’s Killer Bread, this is the 21 grains and seed one.

For lunch when I’m home, I’ve been making greek salad and fried cheese toast – so good.

And, again.

And, another one.

Have you eaten a cantaloupe lately? Cruising reminded me how much I love it. Been snacking on it.

Made a batch of white chocolate peppermint pretzels – I couldn’t find any in stores so had to make it myself!

Grinch + snacking. I love making pallets for the girls on the floor. Love doing it as a kid.

We’ve been having hot chocolates with whipped cream on repeat. Honestly, hot chocolate kinda always hurts my stomach, but I love the festiveness of it so have been having it.

Today I needed a snack when out. I didn’t want to spend $8 on a chocolate croissant, so I opted for a $1.20 donut instead – glazed buttermilk. Yum. This is my fav donut, except I really love the old fashioned version of it with the ridges too.

That was the week. Onto Christmas now!

  1. I must know, what is fried cheese toast???
    (And, your Greek salad looks delicious!)

    • haha you just cook cheese in a skillet until it melts and then put a piece of toast on top of it while it’s still cooking. The cheese sticks to the toast and the other side of the cheese gets all crispy and voila you have “fried cheese toast.”

  2. This sounds equal to my level of expertise in the kitchen LOL. Will have to try!
