Food we are, Chapter 7.

Hello! Happy Saturday. I’m up at 3am for the second day in a row…so it goes. Hopefully I’ll be able to get a nap later. Mostly I love waking up early in a quiet house. Eating breakfast uninterrupted and everything being still and quiet is so nice. Here’s some food I ate this week :)

Look at my new pretty mug. It’s glass and was a Target dollar spot find. Perfect for my lattes.

Easily my favorite meal this week was the veggie burger from Hop Doddy. This burger has like 12 ingredients on it – pesto, aioli, arugula, tomatoes, goat cheese – it’s fantastic. I felt so depleted and hungry at this meal and needed a ton of sunchips to fill up…felt like a bottomless pit, but the sunchips did the trick.

Every once in awhile I like eating beef sticks/jerky, it’ll be a short and fleeting window lol. Paired here for a snack with an oatmeal muffin.

This past weekend we went to the lake to get out of the house for the final couple showings. It is not wasted on me how great it is that we had somewhere to get away to.

I actually took the kids outta school on Friday because we were all feeling the intensity of the home buying/selling process.

But, good news! Our house sold. We had 23 showings in 3 days – it was intense, but we didn’t have to have an open house. The house was on the market 5 days and we got 6 offers, one of which we accepted on Sunday. It was a fast and furious process.

Dinner by my mom & dad at the lake – bread, salmon, salad.

During a Target run to get pimple patches – my skin has been nuts with the move intensity – I picked up a Core Power for an easy snack. I think these taste great.

One night the girls and me met friends at the park in the late afternoon, so I texted Andrew that we had zero dinner plans and asked if he could cook. Came home to nachos, yum.

Another Mexican inspired dish – burrito bowls for lunch. Eaten after I took a multi-hour morning nap. The excitement and stress of the house stuff has zapped me.

Another day, another nacho.

Sunday we watched the Super Bowl with friends and had a potluck – sliders & 7-layer dip (which I always forget how much I love). Seconds of the dip were enjoyed.

An easy dinner was Super Bowl pizza leftovers + broccoli.

A dinner of rotisserie chicken + a sauce + salad + roasted sweet potatoes.

Another night leftovers of that.

one day for lunch was craving oatmeal – made with milk (of course) + whipped a banana in + ground flaxseed + almond butter to top.

sandwich + sun chips.

nutella toast snack.

  1. The sandwich + sun chip + diet coke combo is calling to me! We’re also in the process of moving with a bunch of little kids – solidarity! It’s so stressful but so exciting! Hope you have a great week!
