Food we ate, Chapter I have no idea what week it is.

I have been sick for several weeks and I finally got a diagnosis. I have mono! What the heck?! My main symptoms now are fatigue and spleen pain, which feels like I’m being stabbed in my back. Everyone I’ve told about the mono immediately says, “what are you a college freshman?! It’s really been terrible. The extreme fatigue makes me feel like I’m drugged. I’m hoping the worst of it is behind me. I’ve had to take time off work and it’s been really difficult as a mom having a family to care for. Mono seems to affect everything from the head down. We’ve also had food poisoning and a stomach bug. It’s been a mess. Spring 2023 is going to go down in infamy. With that, food for me has just been a lot of snacks and meals when I’m feeling up for it. Andrew’s mom helped us and brought a bunch of food last week. I can see how the mono is an answer to a prayer I’ve been prayer, but when I’m in pain and really struggling, at times, it’s hard to keep that useful perspective. Here’s some food we’ve been eating:

Overnight oats blended into a smoothie.

One of the things Andrew’s mom brought was a fantastic quiche.

A lot of super bland meals of chicken noodle soup & gatorade or chicken, saltines & gatorade.

One day I actually cooked, which has been extremely rare in the last 3 weeks and made tortellini and roasted cauliflower with chunks of good parmesan.

Some yogurts as I’m able while trying to support my gut flora.

Having a lot of snack throughout the day like these super thick tortilla chips + queso.

Also, fortunately, nutella crepes and lattes have always been sounding good, so grateful for that.

  3. Ong I had it last year and could not keep my eyes open! I didn’t have spleen pain, it was all in my neck. I hope you feel better STAT!

    • UGHHH the worst! Yes, to not being able to keep your eyes open. I had to walk like 100 steps to get one of the kids from school and I didn’t think I was going to make it…was so fatigued.

  4. Ugh! Praying you all get well soon. Your nutella crepes are still on my list to make. Those tortilla chips look like the best tortilla chips!
