Food we ate, Chapter 16.

Hi guys! Here are some things we ate in the past week.

Let’s start with the most fun one! I planned Andrew and I a date night out to celebrate Andrew’s birthday. We went to one of those Candlelight Concerts + a nice dinner. The concert was a string quartet that played Coldplay songs. It was so good and I really enjoyed just getting to sit still for an hour with no one whining at me while songs from my high school years (that I don’t have negative associations with lol) washed over me…it was awesome! My only complaint was that the candles were fake candles. AND I wanted to be immersed in a sea of candles and we really weren’t.

Dinner after was at B&B Butchers.

I had a French 75 (mostly because they remind me of an old friend I love), fried calamari, bread, and a wedge salad. We stayed out until past 9pm, which is super late for us lol. We are usually in bed by 8:45pm. Was such a needed break from routine!

As I’m still on the mend from Mono, Pickles (Andrew’s mom) dropped off some meals again. This was lasagna that we paired with bread and a Caesar salad.

Smoothies have been sounding good lately, so I’ve made several acai bowls and green smoothies for meals or snacks.

Next up, I loved this Sweet potato & black bean chili from Garnerish. I was craving something with a lot of vegetables/produce/freshness and it was so good with the chunks of avocado and dollop of sour cream on top. Yum. I got tired of it after a few meals, so the rest is in the freezer for another day.

Another night I made fried rice, teriyaki chicken and edamame. Despite looking pretty, I thought this was pretty terrible. The teriyaki chicken and fried rice were pre made / frozen and they just didn’t taste good to me at all. The edamame was great tho.

Another night we had a bunch of ears of corn and a rotisserie chicken and called it dinner.

My go-to meal of life when I don’t know what to make is usually quesadillas. Paired here with salsa mixed with sour cream.

Another day I had a Layne’s craving, so I got that.

Also, my Dad got these cake ball Easter treats from Sam’s and they were excellent. He sent us home with them after Easter and I loved them.

I hope this gives you some inspiration and that you have a restful weekend :)

  1. Is there a certain recipe you follow for acai bowls or smoothie bowls? I can never get them to taste right when I make them at home lol. Thanks! Glad you all got a lovely date in for your husband’s birthday!:)
