Food we ate, Chapter 36.

First up, snacks.

One day for work I made a large smoothie to take for lunch and then brought some prunes + a Cookie Dough Chobani Flip for a morning snack. I really like the cookie dough design on the packaging and it makes me happy when I open my fridge and see them in there!

Smoothie in the making: whole milk, chocolate protein powder, almond butter, strawberries, spinach, cauliflower, and a banana. Yum.

Produce and plants have sounded *very* good this week. I think it’s the last of the gastritis making me have little appetite for chicken and other meats. For a snack I had oven roasted chickpeas + potatoes. It was all SO crispy. So good.

We went to the lake and I made Texas Caviar. Yum. Hello, Maggie & Louis.

At the lake my sister made an Asian Crunchy Ramen Salad that was delicious. Paired with pita chips, Texas Caviar and a Gatorade. Sometimes nothing sounds better than a gatorade!

Another meal at the lake was a greek salad + roasted chickpeas.

And then another snack was more chickpeas + pita. They just sounded SO GOOD. Andrew nicknamed them, “portable hummus.”

On the way to the lake we munched on pretzels.

Last night Andrew and I went on a date night for greek food at Niko Niko’s. We were across town for a church event and while I always like the idea of eating here, I never get anything I’m blown away by. AND the booths at this place are always sticky to me and I just can’t with a sticky booth!! If I wanted to feel like I was sitting in syrup I would go to a diner. I had a falafel wrap that was just meh. It wasn’t great. The falafel needed to be smaller, feta needed to be added, the tzatziki needed to be doubled and it needed a garlic forward sauce.

Got gelato to go that was GREAT. It tasted like frozen pudding, in a good way!

Before I left for work today I put a pulled pork in the crockpot, so if the house doesn’t burn down, then we’re having that tonight.

One day I got CAVA for lunch. YUM.

And you know a week can’t go by without nutella crepes. Had for dinner one night. We love these for dinner. Everyone likes them and no one complains…YESSSS.

For breakfasts this week it was the same meal on REPEAT. Maple & brown sugar protein oatmeal with added walnuts and bananas. Served with an iced vanilla latte, of course.

One day I woke up at 2am and felt like I should get up and go pray on my knees, so I did. Then I got hungry and made oatmeal. Then I feel asleep again around 5. Then I was very tired the next day lol.

That same day when heading into work I stopped and got that croissant of my dreams I’ve been talking about – ham + asiago. IT. IS. SO. GOOD.

And then back to oatmeal.

And…what could this be?! More oatmeal! Eaten one night in bed as a snack because it sounded so good.

And with that, I’m off to enjoy a weekend watching hours and hours of tennis!
