Food we ate, Chapter 1.

Back to week one of the year!

Let’s start with New Years Eve. Andrew and I were without the girls thanks to my parents, so we went out to a nice dinner at Squable. We ordered too much food and spent too much money, but I’d definitely go back again and order half of what we ordered this time. I’ll share the highlights from the meal and what I’d go back for. Everything on the menu was made to be shared.

The broccoli was great. Some kind of salty, creamy (but not mayo-y) sauce was on it that was great.

The vegetable lasagna was awesomeee.

I also had a couple of salted watermelon margaritas that tasted like a watermelon jolly rancher, which we all know is the best jolly rancher of all. I’d change nothing about this other than the watermelon garnish was dry and would’ve been better if it had been soaked in juice.

For dessert we got a hazelnut chocolate pudding thing that had a recommended port pairing. This was great. Can’t wait to have this again.

Was a great night. Then we went over to our neighbors house to ring in the New Year and I had a steady stream of champagne. Was a blast!

The next day I went on a magical run. For about a year I’ve had this loose goal of what I was calling my “legacy run” where I run by multiple grandparents houses (maternal great grandma and then paternal grandma) and I was able to do it! All the factors aligned and I felt awesome and felt like Forest Gump or Homer’s rocket and like I could just go for miles. Post run bliss captured below. It ended up being right under 5 miles.

Some breakfasts we’ve had:

One day I made French Toast. It was delicious, but I made it one Dave’s Killer Bread, so the kids hated it. Topped here with bananas, peanut butter, syrup and powdered sugar…yum. Enjoyed while watching the news – I’m a Today show fan through and through. Gimme Hoda and Savannah.

Another breakfast has been sweet and savory with half fried cheese toast + half nutella toast.

One day at brunch time I had a smoothie (one of those Costco fruit packs; I added frozen banana + kale + peanut butter) and a slice of fried cheese toast.

For lunches I’ve been doing a lot of turkey sandwiches.

Another sandwich Andrew made was sun-dried tomato spread + chicken + thick slices of mozzarella. I copied and have been making it too. It’s great.

One day Andrew was going for husband of the year and packed my lunch – yes, please! Rice bowl.

For snacks:

Homemade latte + belvita

Prunes. I really love prunes. They feel like such a superfood to me. I’ll pair with some chocolate..yum.

Also, made a double batch of chocolate chip cookie dough to bake and freeze. We’ve stopped buying kids bars (for budgeting reasons), so cookies are replacing those.

Pickles took the big girls for a movie date and brought them back with Crumbl for all. YUM. The middle left cookie had a whipped cream scoop of “ice cream” on top and the whipped cream tasted like ice cream – super tasty and points for creativity were given.

Dinners:

Lasagna leftovers from Squable + roasted cauliflower.

Spaghetti + Caesar salad + garlic bread. Andrew has started making bread…so good.

We went out for Mexican food one night.

Noodle veggie bowl.

Steak + pinch of yum ramen salad.

We did a Costco run and portioned out meat for the month. This whole process took 3 hours (shopping and portioning) and we wouldn’t have been able to do it if the girls would have been home (this was New Years Day and they were still with my parents). I think we’d have to get a sitter to do this in the future. I hate how much Andrew and I have to divide and conquer tasks. I married him because I like doing many things together! Was nice to shop and plan together for once.
