Food we ate, Chapter 14.

I just started a new medication and it has some side effects, so I’m up at 2am and figured I’d go ahead and put together this post. Each week we’re getting more and more into our flow at the new house – glad to be here. Here’s a glimpse at some of the things we ate.

Quinoa salad for a snack after said yoga class. Andrew has a strong burning stomach reaction to quinoa, so I never make it. Hadn’t had it in a few years! It’s fine. Not my favorite, but I ended up in a time crunch and just needed to grab something and this was the something in front of me.

We got an air fryer! I’d never used one. It’s been fun. Any air fryer recipes you love? I’d love to hear about them!! We did a salmon dish in it that we served with a balsamic gnocchi + roasted vegetable salad.

Then we did a chicken dish in it.

A couple evenings I’ve wanted to munch on something after dinner. Hello, Boom Chicka Pop!

Overnight oats have sounded good for lunch, so I made them several times to take to the office with me.

This was a nice night. Andrew made homemade focaccia and we put out a cheeseboard. My parents came over and we opened a bottle of wine. Would easily eat this again. Was great.

For one dinner I had roasted carrots and pulled pork.

Followed immediately by a slice of carrot cake pie from a bakery around here.

I had gotten the pie for Easter, but ended up with a lot of leftovers.

This was a tasty lunch – leftover risotto + eggs.

Another day, another lunch – leftover drop biscuits + bell peppers + blue cheese dressing + rotisserie chicken.

In bed after getting the girls down watching HGTV and eating granola + milk.

Quesadillas + chips + queso for dinner.

Did several yogurt parfait snacks with this granola that is so good.

Still going strong on that blonde espresso + oatmilk + sweeteners Starbucks order.

    For the air fryer , maybe you should try Greek yogurt dough /crust pizza with peanut butter dressing. I saw it on YouTube.
