Food we ate, Chapter 22.

Pizza! We have been using our Ooni a lot. My favorite recipe is one I got off Netflix’s Chef’s Table Pizza series: olive oil + garlic base, mozzarella, high-quality parmesan slices, rosemary, thinly sliced red onion, and then add crushed pistachios after cooking it. IT.IS.SO.GOOD.

We use this crust recipe from Pizzeria Lola and it gets better (in terms of increased depth of flavour) after being left in the freezer for a couple weeks.

Another night we had back ribs, roasted sweet potatoes and Caesar salad. My kids love ribs. They won’t touch a plain chicken breast, but the more fatty and flavorful meats they typically readily accept.

One night my mom made us parmesan chicken (my childhood favorite), noodles, veggies and an Asian sauce – was fresh and satisfying.

Another night I only needed to feed myself so I made a sweet potato scramble with roasted sweet potatoes, feta, cilantro, pico de gallo, scallions and a couple fried eggs. This is a meal I would eat on repeat. I love these flavors.

This wasn’t a dinner, but a lunch. I’m obsessed with the Thai Chicken Salad from Mendocino Farms. It’s so good. I get it without mango, because the texture of mango creeps me out sometimes.

One night was a hodgepodge of things: leftover pizza, Caesar salad, pita chips, blackberries, babybell cheese. It worked!

One night my college BFF brought over mini pavlovas + lemon curd. I had never tried pavlovas before! We all got a kick out of how they looked like a fried egg.

Another night I had no idea what to feed everyone, so I just made everyone oatmeal.

Have you tried the Kind Frozen bars or Trü Frü’s chocolate covered strawberries? I like them both.

  3. I love kind frozen bars. They are such a good dessert or snack! I really enjoyed this post. Your creamy banana oatmeal with almond butter and cinnamon sugar has been on repeat for weekend breakfast for a while! No time during the week day to do stovetop oatmeal lol.
