Food we ate, Chapter 2.

Hello from the middle of January! Our food budget is actually on track to work – which comes as a surprise to me lol. I will likely do a separate post on that for those who are interested. For those of you on the disordered eating spectrum, if you don’t have to be on a food budget, I’d recommend you don’t be. A focus on permission to eat and get in touch with cravings is just as important of a cause as budgeting.

Here are some of the foods I ate this past week. Again, I hope these posts serve as useful inspiration for you as you’re moving through your week and/or planning your meals and snacks for the week.

Let’s goooo! Starting off with some dinners we did…

burgers + fries

I made enchiladas with a store-bought creamy cilantro sauce, swiss cheese, chicken and zuchinni. Came out great, so much so that I ended up making a second batch.

Eaten one night with chips + a margarita. Lately every time I make enchiladas they come out unreasonably spicy…these were perfect. I had this as a lunch (minus the margarita) a couple times too.

Spaghetti + caesar salad. I wanna do a post on my experience feeding kids lately. “Crouton salad” aka caesar salad continues to be a beloved item at the moment. This past week the girls were eating skittles with a spoon (like it was cereal) and I was jarred by it. Would be good for me to do a post to reflect on it all.

And then all other dinners were leftovers of the above.

Lunches were looking like:

A sandwich made with Andrew’s homemade bread. Turkey + swiss + honey mustard – yum. And now Andrew is getting into sourdough and I am so happy about that.

Another day, another sandwich. This time with leftover roasted cauliflower. I think cauliflower is my favorite vegetable right now.

Leftover spaghetti eaten at the office.

Asian vegetable noodles for lunch eaten at the office another day.

Breakfasts were:

Nutella crepe + coffee.

Fried cheese toast + eggs. I’ve been doing one egg + 2 egg whites lately because I’m having some gallbladder issues (I think), so starting to be a bit aware of the fat content for the staple meals I have on repeat.

Again.

Some snacky foods:

A cement colored smoothie lol.

Vanilla chobani + walnuts + dried cherries – I really like this combo.

Pistachios + prunes

Latte + nutella toast.

Cookie dough pressed into a ramekin and microwaved for a bit.

In the name of the budget, I tried to make semi-homemade almond croissants out of store-bought croissants. They were okay. Not great.

  3. This is so nice to find a real food blog, especially in the midst of motherhood and recovery. I’m going to try the cookie dough snack trick!
